Easy Chicken & Cheese Quesadillas

Ingredients:

1 cup cream cheese, softened and divided

1/2 cup CHI-CHI'S® Original Recipe Salsa Medium, drained

6 CHI-CHI'S® (10-inch) burrito-size flour tortillas

2 cups cooked chicken breast, shredded

2 cups Monterey Jack and Cheddar cheeses, shredded

1/3 cup green bell pepper, diced

1 teaspoon vegetable oil, for brushing tortillas

Directions:

1) In a bowl, combine cream cheese with salsa. Spread each flour tortilla with cream cheese mixture

2) In bowl, combine chicken, shredded cheese and diced bell peppers. Top half of each tortilla with chicken mix

3) Fold tortillas in half over filling. Lightly brush both sides of each tortilla with vegetable oil.

4) Heat quesadillas in large nonstick skillet or on a griddle until hot and golden brown on both sides.

5) Cut quesadillas into wedges and serve with CHI-CHI’S® salsa. Serves 6.
