Mexican Lasagna

Ingredients:

1 pound ground beef, lean

1 package CHI-CHI'S® taco seasoning mix

1 box lasagna noodles, no-boil

1 (26oz) jar spaghetti sauce

1 (16oz) jar CHI-CHI'S® Thick & Chunky Salsa Hot

1 (15oz) package ricotta cheese

1 cup refried beans

1 egg, lighty beaten

3 cups Mexican blend cheese, divided

Directions:

1) In skillet, prepare ground beef with taco seasoning mix as package directs. Meanwhile, in bowl, combine spaghetti sauce and salsa; set aside.

2) Place about 1 cup of the pasta sauce mixture in a 9x13-inch baking dish. Top with one layer of lasagna noodles.

3) In another bowl, combine the ricotta cheese, refried beans and egg. Spread half of ricotta mixture over the lasagna noodles.

4) Top with half of the meat mixture and sprinkle with 1 cup of the shredded cheese. Repeat layers, ending with pasta sauce mixture and remaining Mexican cheese blend.

5) Cover lasagna with foil and bake at 375°F for 50-60 minutes.

6) Uncover and continue to bake for an additional 5 minutes or until cheese is melted. Let stand 15 minutes before serving. Serves 12.
